Alfalfa Sprout Gazpacho

A cold soup, very refreshing on a hot day!

Combine:
  • 125g Alfalfa sprouts
  • 1/2 cucumber, chopped
  • 1 scallion (or onion), chopped
  • 2 celery stalks
  • 1/2 pepper, chopped
  • 1 clove garlic
  • 2 tomatoes (med.), chopped
  • 1 zucchini (small), chopped

  1. Blend 2/3 mixture in food processor or blender.
  2. Add to the rest of the mixture, along with 3 cups tomato juice.
  3. Season to taste with salt & pepper. Chill 1 hour, serve.
