A cold soup, very refreshing on a hot day!
- 125g Alfalfa sprouts
- 1/2 cucumber, chopped
- 1 scallion (or onion), chopped
- 2 celery stalks
- 1/2 pepper, chopped
- 1 clove garlic
- 2 tomatoes (med.), chopped
- 1 zucchini (small), chopped
- Blend 2/3 mixture in food processor or blender.
- Add to the rest of the mixture, along with 3 cups tomato juice.
- Season to taste with salt & pepper. Chill 1 hour, serve.
